Gorgonzola and poached pear salad with toasted seeds

Pears are beautiful at the moment. My favourite variety is Packham’s Triumph – firm but deliciously juicy with just the right amount of crunch, which makes them great for eating and for cooking. Pear and gorgonzola is a classic combination. For this recipe I’ve poached the pears in a red wine syrup and scattered them over fresh rocket leaves with creamy gorgonzola and toasted seeds.
